Hand-picking the olives, is pivotal to avoid bruising which induces fermentation. Cold extraction at a state-of-the-art olive press within 8 hours of the olives’ harvest, is used to minimize oxidization and fermentation acidity. Storing takes place in controlled facilities. All procedures are certified for organic produce (EU 834/2007). Timion products have received a Protected Geographical Indication status (PGI “Laconia”)
